Banzha is local Yunnan slang for "fantastic". We say "Banzha" when we have eaten a good meal, but we can also use it more generally as a response to a great experience.

Food from Yunnan is known for its unique flavors influenced by the province's diverse geography, climate, and ethnic groups. Yunnan borders Myanmar, Laos, and Vietnam. The food is strongly influenced by the flavors of these neighboring countries. We make a lot of use of fresh herbs and spices, including mint, coriander, lemongrass, and chili pepper. These ingredients are often used to flavor soups, stews, and noodles.

Food from Yunnan is also known for its bold and complex flavors, which often include sour and spicy notes. Sour flavors are usually achieved through the use of fermented ingredients, such as pickled vegetables or fruit, while spicy flavors come from the use of fresh or dried chili peppers.
